There is no minimum purchase - you can buy one shirt, or a hundred. The cost of the embroidered logo is just $5.50 over the regular garment cost.

I've had several requests from folks wanting to add their boat name to the shirt. My recommendation here would be to purchase the standard C42 shirt from Lands' End, and then have a local shop embroider your boat name. This is likely the cheapest solution.
